While baklava is the epitome of Greek desserts, I believe that galaktoboureko is just as deserving of the spotlight. It’s been proven, or more like believed, that even the gods, like Zeus, indulged in these sweet treats after dinner – well, maybe not scientifically proven, but it’s certainly a belief many Greek families hold dear.

Greek Desserts: 5 Must-Try Greek Pastries for Your Next Sweet Fix

One of the first things Jane and I learned about Greek desserts is the role of Greek honey. Its unique flavor enhances everything from baklava to cakes and cookies. I can confidently say that Greek honey is some of the best in the world. With thousands of native flowers blooming across the country, Greek bees collect nectar from a variety of plants, creating honey with an unparalleled richness and complexity. The thyme blossom honey, in particular, has a subtle yet profound flavor that makes Greek desserts like baklava extra special.

In fact, when we set out to make baklava for this site, we knew we had to use high-quality Greek honey to do the recipe justice. Thanks to our friend Alice from FlavorTeaze, we got our hands on some exceptional Greek Thyme Blossom Honey, which was perfect for the job. If you’re looking to experience this incredible honey, Alice’s Greek gourmet food shop is a fantastic place to find it.

What Makes Greek Desserts So Special

Greek desserts hold a special place in the hearts of many, and it’s no wonder why. One of the key elements that make these treats stand out is the use of phyllo dough. Phyllo, or filo, is thin, delicate dough that creates a crispy, flaky texture when baked. It’s often used to wrap around nuts, honey, and other fillings, creating layers of crunchiness that melt in your mouth.

When we first made baklava, we quickly realized that the perfect balance of nuts to phyllo layers is essential for a great result. Some people like more of the nut mixture, while others prefer a more subtle nutty flavor. We found that we preferred a higher ratio of nuts to phyllo, and we adjusted the recipe accordingly. For the nuts, we used a mix of walnuts, almonds, and pistachios, which gave the baklava a delightful variety of textures and flavors.

Another lesson we learned is that butter plays a crucial role in the success of baklava. While it might be tempting to use copious amounts of butter, we found that a light coating between the layers of phyllo was all that was needed. Too much butter can make the baklava soggy, and that’s a fate we wanted to avoid.

Step-by-Step Baklava Recipe – A Greek Delight

Now that we’ve shared the secrets behind the perfect baklava, here’s a step-by-step guide to making this Greek dessert at home. You’ll need a few ingredients that you can find at most grocery stores, but for the best flavor, make sure to use high-quality Greek honey. We’ve included tips along the way to help you perfect this dessert.

Ingredients:

  • 2/3 cup chopped walnuts
  • 2/3 cup chopped almonds
  • 2/3 cup chopped pistachios
  • 1/4 cup sugar + 1 tablespoon
  • 1/2 pound box phyllo sheets
  • 1 teaspoon cinnamon
  • 1 stick butter, melted for brushing

For Syrup:

  • 1 cup water
  • 1/4 cup sugar + 1 teaspoon
  • 1/4 cup Greek honey
  • 1/4 teaspoon vanilla extract
  • 1 lemon rind (about 2 inches)
  • 1 tablespoon lemon juice

Instructions:

  1. Make the Syrup: In a pot, combine all ingredients for the syrup and bring it to a boil. Reduce the heat and simmer for 10 minutes. Turn off the heat and let the syrup cool.
  2. Prepare the Nut Mixture: Combine walnuts, almonds, pistachios, cinnamon, and sugar in a bowl. Mix well.
  3. Prepare the Phyllo: Cut the phyllo sheets to fit your baking pan (we used an 8×8 pan). Lightly grease the pan before laying down the first sheet of phyllo.
  4. Layer the Phyllo and Nuts: Brush a thin layer of melted butter on the first sheet of phyllo, then add a second sheet. Repeat this process five times. After the fifth sheet, sprinkle half of the nut mixture evenly over the phyllo.
  5. Add More Phyllo and Nuts: Add two more sheets of phyllo, buttering in between. Then sprinkle the remaining nut mixture evenly. Top with three more sheets of phyllo and butter them.
  6. Score and Bake: Using a sharp knife, score the baklava into diamond shapes. Bake in a preheated oven at 350°F for 30 minutes or until golden brown.
  7. Pour Syrup: After removing the baklava from the oven, pour the cool syrup evenly over the hot baklava. Let it cool, and then serve.
